Every year, my mother-in-law makes a ton of cookies and other sweet treats for the holidays and family reunions and other such events. She always makes this recipe every year, along with the Chocolate Zucchini Roll Recipe that I posted last month. So the credit goes to her. This is her recipe. Enjoy!
INGREDIENTS:
3 eggs
1 cup of sugar
2/3 cup of pumpkin
1 tsp lemon juice
2 tsp pumpkin pie spice
3/4 cup of flour
1 tsp baking powder
1 cup of chopped walnuts
powdered sugar (small amount)
FILLING:
8 ounces of soft cream cheese
1 cup powdered sugar
1 tsp vanilla
4 tbsp butter
INSTRUCTIONS:
1. Cream the eggs until light and fluffy. Gradually add sugar then pumpkin, lemon juice, spices, flour and baking powder. Pour onto parchment paper lined cookie sheet. Sprinkle with nuts. Bake at 375 degrees for 15 minutes.
2. Once cooked, quickly loosen with knife and turn out on dish towel sprinkled with powdered sugar. Roll up towel and all.
3. Make filling - Beat the cream cheese, powdered sugar vanilla and butter together until smooth. You can also add chopped nuts to this filling if so desired.
4. When completely cool, gently unroll and spread on filling and re-roll. Sprinkle a little powdered sugar on top and place on plate and chill. Enjoy!
