I am such a lucky girl. Why? Because the sun is shining, summer is almost here and I have the best family and friends that a girl could ever ask for. We are a close family and our friends are just as close. We love to get together and eat and play games and just spend time together. Just over the last few weekends we have gotten together for 2 cookouts, my niece’s 14th birthday and just yesterday we got together to celebrate Mother’s Day. We had a great time being together and sharing great memories and “Sharing a Coke”. I cannot wait for the next get-together and the next time we get to “Share a Coke” together.
While I was preparing for all of the these fun times with family and friends, I had to do a little shopping first. I stopped by our local Giant Eagle and got all of the necessary ingredients for our cookouts and of course, I picked up all the Coca-Cola that I would need for all of my thirsty friends and family. I also got all the ingredients necessary for my delicious Coca-Cola Cake!( I will share that recipe with you later in this post! ) You can find the Coke in the beverages aisle!
After that, we cooked up some delicious food and set up some fun games for everyone to play! We do this at cookouts and at other celebrations, like birthday parties and Mother’s Day celebrations! We like a good mix of fun games like horseshoes, cornhole, badminton and of course, everyone’s favorite - swimming! All of these fun games and activities really works up a thirst in everyone. And they are all super happy when we Share a Coke with them.
After we have had our fill of food and games, we all just like to sit around and talk. Sometimes we listen to music or even play some instruments of our own. No matter what we are doing, we are having fun because we are spending time with each other, we are sharing cokes with each other and making the greatest memories that we can cherish forever.
We have two more birthdays coming up in June! My sister’s birthday is next and my daughter will be turning 10 this year! TEN! Where does the time go??!?!? And there is also Memorial Day! We always have a huge cookout for Memorial Day! And then the 4th of July! I cannot wait for a summer filled with fun, memories and sharing Cokes!
And remember that Coca-Cola cake I mentioned earlier!?!? Well here is the recipe! Enjoy!
Ingredients
- FOR CAKE
- 2 cups all-purpose flour
- 2 cups sugar
- 1 tsp baking soda
- 1 cup of butter
- 1 cup Coca-Cola
- 4 tbs unsweetened cocoa
- 1/2 cup buttermilk
- 2 eggs
- 1 tsp vanilla
- FOR THE FIRST ICING
- 1 jar of marshmallow creme or fluff
- FOR THE SECOND ICING
- 1/2 cup of butter
- 3 tbs of unsweetened cocoa
- 9 tbs of Coca-Cola
- 1 tsp vanilla
- 5 cups of powdered sugar
Instructions
- Preheat oven to 350 degrees
- FOR THE CAKE PART
- Combine the flour, sugar and baking soda in a mixing bowl and set it aside.
- Then in a small saucepan, heat the butter cola and cocoa. Whisking until it all melts together (this is still for the cake part).
- Pour this mixture over the flour mixture and whisk together. It should come together very easily.
- Then add the buttermilk, eggs and vanilla and mix well.
- Pour into a greased cake pan. And bake for 40 minutes.
- While you wait for the cake to bake, you can prepare the second icing. The first icing is ONLY the jar of Marshmallow creme.
- FOR THE SECOND ICING - Place the 4 cups of powdered sugar in a mixing bowl.
- In a small saucepan - melt the butter, cocoa and cola and heat until it boils.
- Remove from heat and add the vanilla.
- Pour over the powdered sugar and mix well.
- PUTTING IT TOGETHER.
- As soon as the cake comes together, ice it with the marshmallow fluff.
- Then pour the second icing over top of the fluff.
- Let the cake set up in the fridge for at least an hour.
- For a little crunch, you can top it with walnuts or almonds or pecans

Sad to say… I don’t drink any Coke nor do I drink any Soda what so ever… I would love to see them sweeten it with just STEVIA so I can indulge again.

I remember what I considered long, boring Summers doing fix-it work with my father and then sharing an ice cold Coke afterwards. While I always gripped about it then, I have fond memories of it now and Coke was a big part of that. Also, love the cake recipe. Totally something I could see myself trying.

I have a hard time sharing my coca Cola. I’m a bit obsessed but always serve it if and when we have guests over. I found almost all my kids names on bottles, still missing two. Love coke!

Looks like a fun variation on cake - we will have to use this for a sampling I think. Looks like this year I may even find one with my name. Nothing for any of the kids though, we went way off the beaten path with names for them.
