The official start of summer is tomorrow! And what goes better with summer than ice cream! These Mini Patriotic Ice Cream Sandwiches are a great summer dessert and they would be absolutely perfect for your 4th of July BBQ or Picnic! There are pretty simple to make, also. The only baking required is the cookie part of the sandwich. You just make the cookies, let them cool, add the ice cream in the middle and then add some sprinkles or decorative sugar or just leave them as they are! This is such a fun and easy recipe for the kids to help you with! In fact, my daughter pretty much made these all by herself. I just supervised when the oven was in use! I hope you enjoy these Mini Patriotic Ice Cream Sandwiches, and my daughter, does too!
The first thing you need to do is make the cookie part of this Mini Patriotic Ice Cream Sandwich. For that you will need flour, baking soda, salt, eggs, butter, sugar, brown sugar, vanilla extract, white chocolate chips and blue food coloring. If you do not want to use the food coloring, you do not have to. You can make the cookies their regular color and use blue sprinkles and strawberry ice cream for the red, white and blue part. Just as long as you use red, white and blue something - you can make these patriotic ice cream sandwiches any way that you want.
So now, to make the cookies. First you sift together 2 and a half cups of flour, a teaspoon of salt and a teaspoon of baking soda in a bowl and set it aside. Then in a separate bowl, you beat together 2 and a 1/4 cups of butter, 3/4 cup of brown sugar and a 1/2 cup of sugar. Once that is incorporated, beat in a teaspoon of vanilla and 2 eggs. DO not overbeat. Then add in blue food coloring until you get your desired color. Next, fold in one cup of white chocolate chips.
Chill your mixture for 20 minutes. Preheat your oven to 340 degrees. Line cookie sheets with Parchment paper. Remove your dough from the fridge and drop dough by the spoonful about 2 inches apart. I also like to press more white chocolate chips on the top so that they stand out when they are done. This is optional. It does not matter what size you make, if you want to make mini ice cream sandwiches, just use the lid of a mason jar, or a small circular cookie cutter after the cookies have completely cooled to make them the size you want. Bake for about 8 to 11 minutes, depending on how quickly your oven bakes. Let them set for a few minutes before moving them to a wire rack.
These cookies are a bit more cakey than other cookies. More soft. I like to use soft cookies for ice cream sandwiches. In my opinion, it makes them easier to eat. Once the cookies are all cooled, I put them in the freezer for a few minutes before I assemble the sandwiches. Then I take them out of the freezer, add some strawberry ice cream in between two of the cookies. Smush them together very gently so that you do not damage the cookies. Then using a butter knife, scrape the excess ice cream off. Then you can leave the ice cream sandwiches as is, or you can roll them in red sprinkles or red sugar. Then put them back in the freezer until a few minutes before you are ready to enjoy them. Enjoy!!!

- 2 1/2 cups of flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs

- 1/2 cup of sugar
- 3/4 cup of brown sugar
- 1 teaspoon vanilla extract
- blue food coloring

- 2 cups of strawberry or cherry ice cream.
- red sugar crystals (optional)
- red sprinkles (optional)
Instructions
- FOR COOKIES
- Sift together flour, baking soda and salt in a bowl and set it aside.
- In a separate bowl, beat the butter, brown sugar and sugar together.
- Beat in the vanilla and eggs.Do not over-mix.
- Gently add the dry ingredients until incorporated.
- Add blue coloring until desired color is reached.
- Stir in white chocolate chips.
- Chill for 20 minutes.
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper.
- Remove dough from fridge and drop by spoonfuls 2 inches apart on the lined cookie sheets.
- Bake 8 to 11 minutes.
- Let sit for 3 minutes before moving to wire rack.
- Let them cool completely.
- ASSEMBLY
- If you wish to make the cookies more even, you can use a circular cookie cutter to make them into circles.
- Add some strawberry ice cream in between two cookies. Smush gently so you do not break the cookies.
- Wipe any excess off with a butter knife.
- Roll them over plates of red sugar crystals or red sprinkles if desired.
- Enjoy!
