Every month, a few blogging friends and myself all get together and do a fun hop called Pinterest Remakes. We find a fun craft or recipe on Pinterest and we ‘remake’ it. This month, I am going to make Winter White Red Velvet Fudge. I found this pin and I thought it not only looked delicious, but beautiful as well. But I added a couple of changes and made it the way I thought my family would like. The first thing I changed was adding some peppermint extract to the mix to give it a little kick. And I also made the red and white marble look a little different. I thought it would be pretty if the red and white didn’t have a marbled look, but more of a two-colored fudge.
Now, I will tell you what you need to make this and just how to do it! First, the ingredients.
- 3 cups of sugar
- 1 and a half sticks of butter
- 2/3 cup of half & half
- 12 ounce bag of white chocolate chips
- 7 ounce jar of marshmallow fluff
- 1 teaspoon of peppermint extract
- 1 cup of semi-sweet chocolate chips
- 3 tablespoons of red food coloring
INSTRUCTIONS
- Lightly spray the bottom of a 9 inch square pan and then line it with aluminum foil, then lightly spray that, too.
- In a large microwave safe bowl, place the semi-sweet chocolate chips and the red food coloring and set aside.
- In a separate large microwave safe bowl, add the butter and microwave it for a minute and a half or until fully melted.
- Add the sugar and the ‘half & half’ to the melted butter and microwave for 3 minutes on high. Remove and stir. Microwave it again for 2 minutes. Remove and stir. Microwave again for 3 minutes. Remove and stir. And microwave one more time for 2 and 1/2 minutes. Remove and stir.
- Immediately add the whole jar of marshmallow fluff and the whole bag of white chocolate chips and stir until smooth. Immediately after that, while the mixture is still hot, add half of this entire mixture to your separate bowl of semi-sweet chocolate chips and food coloring and stir until smooth.
- Quickly, using two ice cream scoops (or something similar) drop scoops into the pan rotating the colors. Try not two get two scoops of the same color beside each other. Once you have filled the pan, even it out and use a knife to make swirl patterns on top.
- Put in the fridge for at least an hour to set up. Then cut into squares. Serve and enjoy!
That is all there is to it! Now you have some beautiful and tasty fudge that is perfect for the upcoming holiday season. If you do not like the peppermint flavor, you can substitute with vanilla extract or whatever flavor you think would be tasty with this fudge.
