I love cooking for the holidays. I actually love to cook almost anytime. I am always in the kitchen - creating and experimenting with recipes, especially for the holidays. I have recently been experimenting with rice. Especially with Mahatma Basmati Rice. I love this rice so much because it is an aromatic rice and it has a subtle nutty taste to it. So I thought… why not add more nuttiness to the mix. I made Basmati Rice with almonds. I always love adding nuts to many of my holidays dishes and this one is no exception. This dish would not only be good for a stand-alone side dish for the holidays… you could also use it for a bed for the turkey slices or the ham slices. It would make for a beautiful presentation. You can also use rice to make stuffing. The possibilities are endless with rice! But I think you are going to love this Basmati Rice with Almonds.
The first thing you need to do is get your ingredients together. Here is what you will need:
- 2 cups Mahatma Basmati Rice
- 3/4 cup slivered almonds
- 1 tsp salt
- 1/2 tsp ground black pepper
- 4 cups of water
- 2 chicken bouillon cubes
I love using Mahatma or Carolina Basmati rice. They are so fragrant and delicious. Now that you have all of your ingredients together, you can begin to make the dish.
With Basmati rice, it is better to let it soak in some water before you begin cooking with it. Just take your 2 cups of rice and put them in a bowl. Add a cup or two of water and let it sit for about 15 to 20 minutes. This make feel a more authentic Basmatu rice and can also cut down on cooking time. Then you can begin to cook. Here are the instructions:
- Put the almonds in a large sized saucepan. You could even use a frying pan for this recipe. On medium-high heat, let the almonds cook for a few minutes. Move them around a lot by shaking the pan or stirring them so that they do not burn.
- Once the almonds are a golden brown, add the remaining ingredients. Stir it all up and bring it to a boil.
- After it has started to boil, reduce to low heat and then cover and simmer for about 10 minutes. Or until all liquid has been absorbed.
- Plate and serve. You can also fluff the rice with a fork when it is done, for better plating.
Yields: 8 servings.
That is all there is to it! A delicious, nutty side dish for the holidays. And as I said before, You can use this side dish as a bed for your slices of turkey or ham! It will also go great with leftovers! Just cut up the turkey or ham into pieces and add to this delicious dish! Yummy! Enjoy!

- In a large saucepan or frying pan, cook the almonds for a few minutes on medium-high heat. Shake the pan or stir often so that the almonds do not burn.
- Once the almonds are a golden brown, add all of the other ingredients and stir together. Cook on high until contents come to a boil.
- Once boiling has begun, turn the heat to low, cover and simmer for 10 minutes. Or until liquid is absorbed. Stirring only a few times.
- Serve and enjoy. Or use as a bed for ham or turkey slices.
- Yields : 8 servings.

I haven’t had rice with almonds and I think this would be a great recipe to try. Let me check the availability of Basmati Rice in our local supermarket. I’m saving your recipe for future use. 🙂
I do not think you will have any trouble finding Basmati Rice! I recommend that Mahatma or Carolina brand!
