Every month, a few blogger friends and I get together and do a remake of a Pinterest pin that we like. I chose this pin of an Irish Soda Bread recipe. I have made Irish Soda Bread for quite a few years now but when I made it this most recent time, I decided to add a few things to spruce it up just a bit. Irish Soda Bread is a great recipe for St. Patrick’s Day. I just simply added some cheese and bacon bits to the final product to give it that cheesy yumminess and that bacony crunch.
CHEESY IRISH SODA BREAD
To make this yummy bread recipe, all you need is some flour, baking soda, salt, and buttermilk. Then you will also need a 1/2 cup of shredded cheese and a half cup of chopped bacon bits, but these two ingredients are not necessary.
INGREDIENTS
- 4 cups of flour
- 1 1/2 teaspoons of baking soda
- 1 teaspoon of salt
- 1 3/4 cups of buttermilk
- 1/2 cup of shredded cheese
- 1/2 cup of chopped bacon bits
INSTRUCTIONS
- Preheat your oven to 425 degrees. Grease a cake pan. It is best to use a round one.
- In a large bowl, combine your flour, baking soda, and salt.
- Gradually stir in your buttermilk until the dough comes together. It will be sticky.
- Once your have formed your dough into a ball, put it on a floured surfaced. Knead it gently a few times.
- Form it back into a ball and put it in your prepared cake pan.
- Cut an X into the top of the dough ball about 1/4 inch deep.
- Cover the pan with another round cake pan turned upside down.
- Bake for 30 minutes, while it is covered.
- Remove the top pan and add the bacon and cheese to the top of the bread.
- Cook for an additional 10 minutes, uncovered.

This bread looks delicious. I imagine making some will have the house smelling heavenly. I’ve never really cooked anything for St. Patrick’s day even though I have an Irish heritage, but it’s never too late to start a new tradition.
