Chocolate Zucchini Roll Recipe.

Every year around Thanksgiving and Christmas, my mother-in-law makes a ton of cookies. But she also makes pumpkin rolls and chocolate zucchini rolls. For the past three years, I started making these rolls myself. I skip the cookies, though. I have never been that great at making cookies. So I cannot give credit to anyone for this recipe except for my MIL. So… enjoy… her Chocolate Zucchini Roll!

INGREDIENTS:
3 eggs
1 tsp vanilla
1 cup of flour
3/4 cup of sugar
1/2 cup of cocoa
1 tsp of baking soda
1 tsp of cinnamon
1/4 tsp of salt
1 cup of peeled & shredded zucchini

For Filling:
8 oz. of softened cream cheese
1/4 cup of soft butter
2 tsp. of vanilla
1 cup of powdered sugar

INSTRUCTIONS:

1.  Beat the eggs and vanilla together and set aside.
2.  Combine flour, sugar, cocoa, baking soda, cinnamon and salt. Add to the vanilla and egg mixture that you set aside earlier. Mix well.
3.  Stir in zucchini. 
4.  Spread into a parchment paper lined cookie sheet.
5.  Bake at 350 degrees for 15 to 20 minutes or until cake springs back when lightly touched. 
6.  When baking is finished, turn the pan onto a dish towel dusted with powdered sugar. Peel off the parchment paper and roll it up. Let it cool.
7.  To make the filling, simply beat all 4 ingredients together for 2 minutes on high (cream cheese, butter, vanilla, and powdered sugar).
8.  After the roll has cooled for an hour or so, unroll it and spread the filling on evenly and then roll it up again, without the towel this time. Dust it with some powdered sugar and place in fridge until ready to serve.

    That’s a very creative way to use zucchini! For some reason, I never feel quite so guilty eating sweet treats made with zucchini. I’m getting my veggies, right? 🙂
