Banana Cream Cheesecake Recipe.

I have always loved cheesecake. Always. I have been venturing into new territory lately though with different kinds of cheesecake. Like chocolate cheesecake, orange cheesecake and now… I found the most awesome recipe for Banana Cream Cheesecake on the Taste of Home website. I was not making this recipe for the way it looked, though. I was more worried about how great it was going to taste. Also, I am very lazy and I did not have a springform pan to use, nor did I want to travel in 10 below temperatures to go buy one. So I made this awesome cheesecake my way… and here it is.

INGREDIENTS: 

Crust:
1 & 3/4 cups of graham cracker crumbs
1/4 cup of sugar
1/2 cup of melted butter

Filling:
8 ounces of soft cream cheese
1/2 cup of sugar
8 ounces of frozen whipped topping, thawed, divided
3 firm bananas, sliced
1 & 3/4 cups of cold milk
1 package of instant banana cream pudding mix (3.4 ounces)

Time: 25 minutes + chill time
Yields: 8 slices

INSTRUCTIONS:

1.  In a small bowl, mix the graham cracker crumbs and sugar. Then stir in the melted butter and combine to all ingredients are incorporated. Set aside a 1/2 cup of this mixture for topping. Press the remaining crumb mixture into a 9 inch circle pie pan or a springform pan or even a square pan. Whatever pan you like. Bake at 350 degrees for 5 to 7 minutes. Then cool on a wire rack. 

2.  In a large bowl, beat cream cheese and sugar until smooth. Fold in two cups of the whipped topping. Arrange half of the banana slices onto the crust. Then top it with half of the cream cheese mixture. Repeat layers. 

3.  In a small bowl, whisk milk and pudding mix for 2 minutes and then fold in the remaining whipped topping. Pour over top of the cream cheese layer. Sprinkle with the graham cracker crumb mixture you had set aside. Refrigerate for 1 to 2 hours. or until set.

    I love cheesecake, but would never have thought to dream up a banana cream one. We have a banana cream very basic pie that’s delicious, I bet I’d love this too!
