Oven Roasted Potatoes and Kielbasa.

Now that we are right in the thick of the winter months, I have been preparing more and more comfort food recipes for my family. Meat and potatoes in any form are a favorite for my family, so I like to experiment with different ways to prepare them together and what herbs and spices might pair well with them, too. This week I made some Oven Roasted Potatoes and Kielbasa with some banana peppers and some herbs and spices. I think this recipe is super easy to make and it tastes really good, too! I hope you enjoy the recipe!

Oven Roasted Potatoes and Kielbasa

OVEN ROASTED POTATOES AND KIELBASA

To start, all you need to do is peel about 8 medium to small sized potatoes. I used red potatoes. Then I cut them into bite sized cubes. I then boiled them on the stove-top with 2 beef bouillion cubes in about a quart of water. Do not cook them all the way. They will finish cooking in the oven. Once they are done, dump them into a casserole dish. Then add about 2 Kielbasa sticks cut into bite sized pieces or a little bigger. I also added a handful of banana peppers rings and a 1/4 cup of the banana pepper juice and mixed them all together in the casserole dish with a teaspoon of parsley flakes. I also added a teaspoon of salt and pepper. You can also add a teaspoon of garlic powder or fresh garlic and a 1/2 teaspoon of celery salt. To the casserole dish, you will also add just about an inch of water with 2 beef bullion cubes. You will then make sure the potatoes and Kielbasa are spread evenly throughout the casserole dish and cook at 350 degrees for about 30 minutes, uncovered.

INGREDIENTS

  • 8 small to medium sized potatoes (cubed)
  • 2 sticks of Kielbasa
  • 4 beef bouillion cubes
  • a handful of banana pepper rings
  • 1/4 cup of banana pepper juice
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp parsley flakes
  • 1/2 tsp of celery salt
  • 1 tsp of garlic powder

INSTRUCTIONS

  1. Wash and peel the potatoes. Then cube them.
  2. Cut the Kielbasa into bite sized pieces, maybe a little larger.
  3. Boil the potatoes for about 10 minutes in a quart of water and add 2 beef bouillion cubes to the water.
  4. Once the potatoes are done boiling, add them to a casserole dish. In the casserole dish, add about an inch of water and 2 beef bouillion cubes.
  5. Add all of the spices and herbs and mix around. Add the banana peppers and juice. Make sure the potatoes and Kielbasa are evenly distributed throughout the casserole dish.
  6. Cook at 350 degrees for about 30 minutes, uncovered or until the potatoes are fully cooked
  7. Enjoy!

    I make kielbasa and potatoes all the time, but I usually add onions. I never thought to try banana peppers, I love banana peppers. The next time I make it I’m adding them.

    We’ve been trying to slow cook things similarly lately- This certainly seems like a ‘meat on your bones’ sort of comfort food recipe. I bet the Kielbasa gives the potatoes a marvelous flavor!
