Now that we are right in the thick of the winter months, I have been preparing more and more comfort food recipes for my family. Meat and potatoes in any form are a favorite for my family, so I like to experiment with different ways to prepare them together and what herbs and spices might pair well with them, too. This week I made some Oven Roasted Potatoes and Kielbasa with some banana peppers and some herbs and spices. I think this recipe is super easy to make and it tastes really good, too! I hope you enjoy the recipe!
OVEN ROASTED POTATOES AND KIELBASA
To start, all you need to do is peel about 8 medium to small sized potatoes. I used red potatoes. Then I cut them into bite sized cubes. I then boiled them on the stove-top with 2 beef bouillion cubes in about a quart of water. Do not cook them all the way. They will finish cooking in the oven. Once they are done, dump them into a casserole dish. Then add about 2 Kielbasa sticks cut into bite sized pieces or a little bigger. I also added a handful of banana peppers rings and a 1/4 cup of the banana pepper juice and mixed them all together in the casserole dish with a teaspoon of parsley flakes. I also added a teaspoon of salt and pepper. You can also add a teaspoon of garlic powder or fresh garlic and a 1/2 teaspoon of celery salt. To the casserole dish, you will also add just about an inch of water with 2 beef bullion cubes. You will then make sure the potatoes and Kielbasa are spread evenly throughout the casserole dish and cook at 350 degrees for about 30 minutes, uncovered.
INGREDIENTS

- 1/4 cup of banana pepper juice
- 1 tsp salt
- 1 tsp pepper

INSTRUCTIONS
- Wash and peel the potatoes. Then cube them.
- Cut the Kielbasa into bite sized pieces, maybe a little larger.
- Boil the potatoes for about 10 minutes in a quart of water and add 2 beef bouillion cubes to the water.
- Once the potatoes are done boiling, add them to a casserole dish. In the casserole dish, add about an inch of water and 2 beef bouillion cubes.
- Add all of the spices and herbs and mix around. Add the banana peppers and juice. Make sure the potatoes and Kielbasa are evenly distributed throughout the casserole dish.
- Cook at 350 degrees for about 30 minutes, uncovered or until the potatoes are fully cooked
- Enjoy!

I make kielbasa and potatoes all the time, but I usually add onions. I never thought to try banana peppers, I love banana peppers. The next time I make it I’m adding them.
